Domaine Jean Dauvissat Père & Fils

Since we first started working with this domaine in 2013, Fabien Dauvissat has consistently produced excellent, trademark Chablis that offer superb value for money – and since the 2020 vintage the bottles too have been incredibly beautiful, issued with wax tops and a new label design featuring sketches of the domaine’s various vineyards.

Fabien works everything by hand wherever possible and has also been practicing organic viticulture since 2014. After submitting his application for certified conversion back in 2018, the first fully certified organic vintage from Dauvissat is on the horizon.

The land has also been worked with a biodynamic philosophy since 2019 and the team proudly oversee the expansion of biodiversity within the vineyards, with plantings of herbs and vegetables increasing all the time. Biodynamic certification is also very much on the radar for the future.

Spread over fifty-three individual parcels of vines that together extend to over twenty-two hectares, this is a sprawling estate that produces an exquisite array of bottlings. The domaine’s fruit is carefully sorted and vinified only ever in stainless steel tanks, and the wines are then aged over a relatively long period before bottling. The village level wines are allowed to harmonise for eighteen months prior to release, and the premiers crus for up to two years – to ensure settled, characterful wines with elegance, finesse and a balanced, well-integrated structure of acidity.
