Vinification
Cold settling is carried out before the must is kept on the lees at a low temperature. Fermentation begins 8 to 10 days after harvest in temperature-controlled stainless steel tanks and lasts between 10 and 15 days at 16°C. Bâtonnage is performed one month after fermentation, and the wine is aged on fine lees until racking.
Tasting Notes
Pale yellow with slight golden reflections. The first impression is warm and dominated by acacia flower and gingerbread aromas. As it opens, notes of candied citrus emerge, accompanied by yellow fruit aromas such as syrupy peach and stewed mirabelle plum. Fresh hazelnut and orange blossom notes add complexity, giving the wine a refined, pastry-like profile. The attack is broad, and the texture is round and enveloping. The stewed yellow fruit notes detected on the nose (peach, apricot, mirabelle) are confirmed on the palate. The wine then transitions to flavors of candied citrus zest with a hint of bitterness. The finish is complemented by floral notes of rosebud and subtle hints of licorice and mint.
