Vinification
Cold settling is performed before the must is kept on the lees at a low temperature. Fermentation begins 8 to 10 days after harvest in temperature-controlled stainless steel tanks and lasts between 10 and 15 days at 16°C. Bâtonnage is carried out one month after fermentation, followed by aging on fine lees until racking.
Tasting Notes
Pale yellow with silver reflections. The first impression is fairly intense, marked by fermentation notes. Yellow fruit aromas such as peach and melon emerge on a background of citrus. As the wine aerates, freshness takes over, with mineral and spicy hints, particularly white pepper, enhancing the citrus notes of lemon, lime, and grapefruit. The attack is supple, and the wine is well-balanced. Freshness dominates, leading to a sharp and mouthwatering finish. Citrus flavors prevail once again before transitioning to white and yellow fruit notes, including pear, mirabelle plum, and a hint of melon, completing the aromatic profile.
