Vinification
After cold settling, the must is kept on the lees at a low temperature. Fermentation begins within seven days of harvest and takes place in temperature-controlled stainless steel tanks. It lasts between ten and fifteen days at a temperature of 18 to 20°C. A bâtonnage is carried out one month after fermentation to enhance the wine's texture and complexity.

Tasting Notes

Pale yellow with silver reflections. The first impression is floral, with notes of peony and hyacinth. As it aerates, aromas of white fruit, particularly pear, bring freshness. A subtle toasted hazelnut background completes the aromatic profile. A soft attack that evolves into a livelier, more acidulous profile. The pear notes perceived on the nose carry through to the palate, adding texture. A hint of minerality combined with a delicate vanilla note enriches the overall tasting experience.
