Vinification:
Harvested by hand with careful handling of the bunches, which are transported in small crates to preserve integrity. A double sorting process—first in the vineyard, then on a sorting table—ensures only the healthiest fruit is selected. Pressing is slow and delicate, conducted without the use of sulfur to preserve the wine’s purity and aromatic finesse. Fermentation is driven by indigenous yeasts, native to the site, allowing for an authentic and transparent expression of terroir. The wine is aged in French oak barrels, with 15% to 30% new oak, for a period of 11 to 16 months. No fining is performed, and only a light filtration may be applied if required. Bottling is guided by the lunar calendar to respect the natural rhythm of the wine.
