Vinification:

The pressing is long and gentle, performed without the use of sulfur to allow a pure expression of fruit and terroir. Fermentation is carried out with indigenous yeasts native to the vineyard’s ecosystem. The wine is then matured in French oak barrels for 14 to 20 months, depending on the vintage character. No fining is applied, and only a light filtration may be used, if needed. Bottling is carried out according to the lunar calendar to respect the wine’s natural rhythm.
